Can you overcook nian gao?
OVERCOOKING/UNDERCOOKING NIAN GAO First of all, you don’t want to fill the wok with too much water, or cook the cake on too high heat because you will overheat the nian gao and your cake will look like what you see in the photo above (top).
Do you need to soak Korean rice cakes?
The best place to look for them is the fridge or freezer section of Korean convenience stores or Asian groceries, but you can also find them dried. Dried rice cakes will need to be soaked for around 3 hours (or overnight) before using.
Should nian gao be refrigerated?
The traditional way of making nian gao takes about 20 hours of steaming until all the water content is gone. Therefore, it can be stored for a very long time without the need to be refrigerated.
Why are my rice cakes falling apart?
This is because of many different things like how long it’s been in the freezer in the store, or the atmospheric conditions where you live. You may need to add more or less boiling water, depending on how dry or wet your short grain rice flour is.
How long do Korean rice cakes last?
Put your rice cakes in the fridge for up to 3 days. Set your container of rice cakes in the fridge and try to eat them as soon as you can. For the best texture and flavor, eat them within 2 to 3 days and then throw them away, since they will go bad after that.
What is rice cake called in Chinese?
Chinese rice cakes, or niangao, are made from pounded rice, and have a sticky, chewy texture. Think of them as a kind of thick, oval-shaped pasta. There are sweet versions that have the same name, nian gao.
Does nian gao expire?
At day 3, the nian gao will be much more firm and can be sliced. After day 3, I recommend to wrap them up and keep them in the refrigerator or they can start to get moldy (because we don’t put preservatives). They can keep for months in the freezer however.
